My library has partnered with the Lansdowne-Yeadon Elm Street Project for a variety of projects, most recently live worms in the library for a program we called Kids Go Green: Book Worms. The live worms are red wigglers and they are interesting, especially once you’ve gotten over the ick factor.
During the program we would have healthy snacks for the kids so that we could feed the scraps to the worms. Since I was always running around doing something else during the programs I would miss a lot of the snack time but recently as I helped Imogen prepare salsa for the program I realized that I want to eat more veggies.
In the past I have bought veggies only for them to shrivel and die in my fridge. My intentions are good, if a bit ambitious, so more often I shy away from the produce aisle in favor of a quick meal that may or may not be as nutritious as a shoe sole(exaggeration). But after participating in our Kids Go Green series I realize that I can be an adult that goes green…er.
My three newest eats are freshly made salsa, guacamole and hummus.
The recipes for the salsa and hummus were found on Pati’s Mexican Table and are very simple to make. The Bee and I have tried the salsa and love the flavor the lime juice gives. I will honestly say that limes were not something I ever ate but after having them they have become a staple on our grocery list.
Previously I have bought salsa. It’s easier and well, I didn’t know what to do with all of the ingredients. Now that I’ve had a few tips from Imogen I feel ready to take on Produce Junction and my kitchen.
Guacamole was something I always ignored. It was weird looking and I refused to try it. Last year The Bee and I went out with Cecily and her family and we tried guacamole for the first time.
Delish!
When Imogen made it at the library, she let me sample some before the program and I have been hooked! I tried making my own at home but my avocados were not ripe enough. I was bummed but found out that Wholly Guacamole is sold at my local supermarket and I have been knee deep in guac. My co-worker even turned me on to some flax seed tortilla chips and I am in foodie heaven!
Hummus is not anything we have ever made at the library but it’s something that I have snacked on for a while. Effin Guy and I had dinner at the Dock Street Brewery a few weeks ago and I wasn’t as hungry as thought I was. Instead of a full meal I went with their house made hummus with walnuts, roasted peppers and olives served with baked flat bread.
I’m hooked!
I’ve found a recipe that I would like to try on All Seasons Cuisine. My family has an aversion to chick peas but I think I can make an exception.
I am so happy to have found these recipes and new ways to eat. I have been feeling full and satisfied and haven’t been eating quite as much junk.
I’m headed to get more produce today and will post pictures from my hummus adventure.
