As my kitchen is becoming a more familiar place, I have slowly started to ease out my comfort zone and start creating recipes that satisfy the needs of family and taste good. However, I have started counting calories again and it’s amazing how the body seems to just KNOW that one is adjusting food intake. This makes navigating snack time a little tricky. I like snacking. I like satisfying that urge to nibble and nibble I do! There has to be a way to do it that will allow for healthier choices and a good taste.
With Viki’s Granola, I can satisfy the desire to nosh and not blow my calorie while indulging. I was charged with creating a recipe and wanted to share my creation.
I was originally going to use Viki’s Granola in the crust of the Key Lime Pie I was to bake during the Florida Keys Cooking Contest I recently participated in. However, upon arriving at The Restaurant School at Walnut Hill College, my crust was already made by the chefs at the school. I used the granola to garnish my pie and while I did not win top prize, The Librarian is a fan!
I was browsing through some recipes for ideas to sneak more protein in our diets and came across Peanut Butter Balls. I am a fan of peanut butter and LOVE the dark chocolate flavors. I combined the granola and chocolate and came up with snack bars.
Recipe for Peanut Butter Bars:
2 tablespoons of honey
4 tablespoons of Skippy Creamy Natural Peanut Butter Spread with Dark Chocolate
2 cups of Original Viki’s Granola
Vanilla Soy milk as needed to keep the mixture moist
In a bowl mix the first three ingredients. Add just enough milk to keep the mixture moist.
Line a pan with wax paper.
Press mixture into a pan
Chill in fridge until you’re ready to enjoy
This simple recipe took less than 10 minutes to gather supplies and create and it tastes delicious!
I am still looking for other ways to enjoy the granola. It’s yummy straight out of the bag or as a garnish for yogurt.
